- ¾ cup caster sugar
- 2 ½ tsps Baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 Tbsp Poppy seeds (lightly toasted)
- 1 ⅓ cups Buttermilk
- 2 Tbsps butter (melted)
- 1 large egg (beaten)
- 5 ozs sour dried cherry

1 Potato ricer (oder Kartoffelstampfer), 1 Bowl, 1 Cutting board, 1 Small knife, 1 Large knife, 1 Citrus juicer, 1 Teaspoon, 1 Tablespoon, 1 Hand mixer
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a 12 hole muffin tin.
2.
Mix together the flour, sugar, baking powder, bicarbonate of soda, salt and poppy seeds in a mixing bowl.
3.
Whisk the buttermilk, butter and egg until smooth. Stir into the flour mixture, until just combined. Reserve 12 sour cherries and gently stir the remainder into the mixture.
4.
Spoon into the tins. Place a sour cherry on top of each muffin and bake for about 20 minutes until golden and risen. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
