40 grams Sesame seeds (unpeeled)
1 tsp coarse Sea salt
1 Red chili pepper
2 Tbsps sesame oil
2 sheets clear gelatin
400 grams Sirloin steak
1 tsp vegetable oil
2 Tbsps soy sauce
1 handful Shiso sprout (for garnish)

Preparation steps

1.

Toast sesame seeds in a dry frying pan fry until fragrant. Then remove from the pan and roughly crush with salt in a mortar.

Soften gelatine in a bowl of cold water.

Rinse chile pepper, cut in half lengthwise, remove seeds and cut into thin rings. Mix chile pepper rings in a bowl with sesame oil. Rinse meat and pat dry. Heat oil in a pan and fry meat for 2 minutes per side. Remove from the pan and let rest for about 10 minutes.

Boil 4 tablespoons water in a small pan with soy sauce. Then remove from heat and dissolve drained gelatin in soy sauce mixture. Then beat soy sauce mixture with an immersion blender or a hand mixer on the highest level for about 10 minutes until airy.

5.

Cut meat into thin slices and arrange on a plate. Drizzle with chile pepper oil, sprinkle with sesame seeds and season with salt.

6.

Place a large dollop of soy sauce foam on beef. Serve garnished with shiso sprouts.
