4 Tbsps sesame oil
3 Tbsps Oyster sauce
2 Tbsps Lime juice
½ Tbsp yellow Curry paste
1 Tbsp sugar

Preparation steps

For the pork: Rinse the pork under cold water, pat dry, cut into strips and place in a bowl. Season with the oyster sauce and pepper to taste. Marinate for 15 minutes.

For the sesame spinach: Rinse the spinach and spin dry.

For the pork: Heat 2 tablespoons of the sesame oil in a wok or deep skillet. Add the pork and cook for 2-3 minutes.

Stir in the curry paste. Remove the pork from the wok and keep warm.

For the sesame spinach: Heat the remaining sesame oil in the wok. Add the spinach, lime juice and sugar, and cook, while stirring, until wilted, about 3 minutes. Season with salt and pepper to taste. Drizzle in the remaining marinade from the pork and allow to heat through. 

For serving: Divide the spinach and pork between bowls. Garnish with the sesame seeds.
