500 grams Sea bream fillet (skinless)
1 Mango
2 Tomatoes
2 Tbsps olive oil
1 Tbsp Lime juice
1 generous pinch Vanilla bean
1 pinch sugar
1 Tbsp freshly chopped cilantro
Sea salt

Preparation steps

Rinse the fish, pat dry and dice. Peel the mango and dice the flesh. Blanch the tomatoes, shock in ice water, peel, quarter, core and dice. Whisk the olive oil, lime juice, vanilla, sugar and cilantro together. Add the fish, mango and tomatoes and toss to combine. Season with salt and let infuse for about 10 minutes. Season to taste.

Arrange the tartare on serving plates using a ring mold, if desired, and serve garnished with fresh cilantro.
