Preparation steps

Shuck the scallops and remove the meat. Remove any corail. Rinse the scallops to remove any sand or other residues and pat dry. Slice horizontally into 4 very thin slices. Form the slices into "flower" shapes. To do this, place one slice on the plate, and fold the other 3 to form a flower shape.

Repeat this process until you have 12 "flowers". Drizzle with lime juice, garnish the plate with real flowers, and serve.
