1 ¼ cups all-purpose flour
2 tsps Baking powder
2 Tbsps caster sugar
1 pinch salt
1 tsp paprika
½ tsp mustard powder
2 eggs
½ cup milk
¼ cup butter (melted)
2 tsps chopped rosemary
½ cup Cheddar cheese (diced)
9 sprigs rosemary

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Place 9 paper cases in a muffin tin.
2.
Sift the flour, baking powder, sugar, salt, paprika and mustard into a mixing bowl.
3.
Whisk together the eggs, milk, butter and rosemary until blended.
4.
Add the egg mixture to the dry ingredients and stir until just combined. The mixture will be lumpy.
5.
Place a spoonful of mixture in the paper cases and drop a few pieces of cheese in each. Top with another spoonful of mixture.
6.
Place a rosemary sprig in the top of each muffin and bake for about 25 minutes until well risen and golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
