100 grams finely crumbled Feta
2 tsps finely chopped rosemary
250 grams Pastry flour
3 tsps Baking powder
1 pinch salt
2 eggs
200 grams Buttermilk
2 Tbsps vegetable oil
12 stuffed green Olives
1 12-cup Muffin tin

Preparation steps

1.

Grease a muffin pan and line with paper baking molds. 

2.

Combine the flour, baking powder, tomatoes, feta, rosemary and salt. Whisk the egg, buttermilk and oil together, add to the flour mixture and stir until just combined. 

3.

Fill the muffin recesses with the batter, top each with an olive and bake in a preheated oven (200°C) (approximately 400°F) for 20 minutes, or until a toothpick inserted in the center comes out clean. Let cool for about 5 minutes then remove from the muffin pan and serve.
