- 400 grams Oyster mushrooms
- 400 grams Romanesco broccoli
- 400 grams Broccoli
- 1 shallot
- 3 Tbsps Canola oil
- 1 l Beef broth
- 3 Sausage
- salt
- freshly ground peppers
- 1 pinch allspice
- 1 Tbsp Fruit Vinegar
- 1 pinch sugar

Preparation steps

Rinse and chop the mushrooms. Rinse the romanesco and broccoli and divide into florets. Peel and finely chop the shallot. Saute the shallot in 2 tablespoons of hot oil until translucent. Add the mushrooms and saute for 2-3 minutes. Pour in the broth and bring to a boil. Add the romaneso and boil for 3-4 minutes. Add the broccoli and simmer for about 5 minutes.

Cook the sausages in the remaining oil until brown on each side. Cut into slices.

Add the sausages to the soup. Do not boil. Season with salt, pepper, allspice, vinegar and sugar. Serve immediately.
