- 300 grams Celery
- 300 grams firmly cooked potatoes
- 2 carrots
- 1 bunch scallions
- 2 Tbsps butter
- 1 ⅕ liters Sausage soup (Sausage broth)
- 200 grams Lard
- salt
- peppers (freshly ground)
- Nutmeg
- 2 Tbsps scallions
- 1 Tbsp freshly chopped parsley
- parsley (for garnish)

Preparation steps

Peel the potatoes and cut into cubes. Peel the carrots and slice. Clean and cut the celery in half, and then into slices. Wash, clean and cut the scallion into rings. Fry the celery, the potatoes and carrots in hot butter until translucent. Pour the broth over them, and simmer for about 10 minutes. Add the scallions and simmer evenly for another 5-10 minutes.

Season the soup with salt, pepper, nutmeg, chives and chopped parsley to taste, and serve sprinkled with lardons and parsley leaves.
