- For the sausage
- 300 grams Blood sausage
- 3 Tbsps clarified butter
- For the sauerkraut
- 100 grams Sauerkraut (canned)
- 1 Tbsp Pastry flour
- Frying oil
- For the stewed apples
- 2 Apple
- 1 onion
- 2 Tbsps clarified butter
- 150 milliliters white wine
- salt
- peppers
- For the garnish
- Wild thyme

Preparation steps
1.
For the sauerkraut, squeeze the sauerkraut well and pat dry with kitchen paper. Sprinkle with flour and fry until golden brown in vegetable oil. Remove and drain on kitchen paper.

For the stewed apples, peel the onion, cut into half and cut into fine strips. Rinse the apples, peel, cut into quarter and remove the core, and cut into slices.
Fry the onion in a hot pan in butter until translucent. Add the apples and pour the white wine. Simmer the apples for a few minutes and season with salt and pepper.

For the sausage, cut the blood sausage into slices, and fry in a skillet with butter on both sides.

Serve the sausage slices with stewed apples in preheated plates, and garnish with the sauerkraut and wild thyme.
