3 shallots
2 Tbsps clarified butter
l Grape juice
100 grams Walnut
200 grams bright Grape
100 milliliters Vegetable broth
1 tsp honey
1 Tbsp butter
salt (and pepper)

Preparation steps

1.

Peel shallots, chop and cook in butter. Season sauerkraut with salt and pepper, deglaze with grape juice, cover and cook for 1 hour. Let cool.

2.

Coarsely chop the nuts. Rinse grapes, cut in half and remove seeds. Mix shallots, vegetable broth, honey and nuts into the sauerkraut. To serve, melt the butter in a saucepan, swirl grapes and garnish the sauerkraut.
