4 Beets (medium-sized)
1 kilogram Sea salt (course)
4 egg whites

Preparation steps

1.

Preheat a convection oven to 180°C (approximately 350°).

Beat the egg whites until stiff peaks and fold in two-thirds of sea salt. In a 9x13 baking dish, spread the remaining salt in an even layer.

3.

Peel and halve the beets. Coat the beets in the salt and egg white mixture and lay on the salt in the baking dish. Bake in the oven for 30 minutes. Serve the beets with their salt crusts intact.
