In addition to its versatility, the fish also convinces with its inner values: with around 20 grams of protein per 100 grams, salmon is definitely way ahead of the protein suppliers. Salmon is therefore just as beneficial for fitness and muscle building as it is for well-functioning grey cells and a fast metabolism.

Keep your eyes open when buying fish: Only organic salmon is virtually free of the dubious ethoxyquin, and this substance is found in almost all other salmon fillets. As an antioxidant it ensures that the fish food does not become rancid. However, there is no limit for farmed fish. It is also still unclear how harmful the substance is to health.

Ingredients

For the salmon and spinach rolls
400 grams Puff pastry dough (frozen)
350 grams fresh, young Spinach
1 shallot
1 garlic clove
1 Tbsp olive oil
salt
freshly ground peppers
freshly grated Nutmeg
600 grams Salmon (ready to cook, skinless)
1 egg (separated)
2 Tbsps Whipped cream

Preparation steps

Thaw puff pastry.

Rinse and spin dry spinach. Peel shallot and garlic and chop finely. Heat oil in a pan and saute shallot and garlic until translucent. Add spinach, season with salt, pepper and nutmeg. Remove from heat and let cool. Place in a colander and squeeze well.

Rinse salmon, pat dry and cut into 4 equal slices.

Roll out puff pastry on a floured surface and cut 4 squares (each approximately 15 x 20 cm) (approximately 6 x 8 inches) with a pastry wheel.

Spread spinach on pastry, leaving 1 cm edge (approximately 1/2 inch) and season with salt and pepper. Top with salmon. Brush pastry edges with beaten egg white, roll up and press well. Place rolls, seam side down, on a lined with parchment paper baking sheet. Whisk egg yolk with cream and brush roll s with the mixture. If desired, prick with a fork in a decorative manner. Bake in preheated oven at 200°C (approximately 400°F) for about 25-30 minutes or until golden brown. Remove from oven and serve.
