4 Salmon fillet (each about 200 grams or 7 ounces)
1 lg stalk Leeks
1 bunch Asparagus
½ bunch Dill
salt
freshly ground peppers
2 Limes (juiced)

Preparation steps

Rinse the salmon and pat dry with paper towels. Season with salt and pepper and drizzle with lime juice. Cover with foil and marinate for 30 minutes.

Rinse and trim the leeks and cut in half lengthwise, then widthwise. Pour the fish stock into a frying pan with a heavy lid and steamer basket. Distribute the leek halves in the steamer and season with salt and pepper. Place the fillets on top, distribute 4 dill sprigs on the salmon and drizzle the remaining marinade over the top. Steam over medium heat, covered for about 6 minutes.

Rinse the asparagus, remove the woody ends, cut in half and blanch in plenty of boiling salted water for about 10 minutes, then drain. Arrange the finished salmon and leeks on plates. Place the asparagus on top of the fillets and garnish with the steamed dill. Serve each portion sprinkled with 1-2 tablespoons of sesame oil and garnish with a lime half.
