200 grams Salmon (very fresh)
1 shallot
2 Tbsps grapeseed oil
1 Lime (zest and juice)
Sea salt
freshly ground peppers
200 grams Crème fraiche
4 Tbsps Yogurt (0.1% fat)
½ bunch Basil
4 Scallop
1 Tbsp butter
4 sprigs Lemongrass
Red pepper flakes
Lime wedge (for serving)
Star toast (as desired)

Preparation steps

Rinse salmon fillet, pat dry and chop finely. Peel and finely chop shallot, mix with 1/2 lime zest, lime juice and grape seed oil, combine with salmon and season with sea salt and pepper. Pluck basil, chop leaves finely, mix with crème fraîche and yogurt and season with salt.

Rinse scallops, pat dry, skewer on lemongrass stalks, season with salt, pepper and chili flakes and fry in butter for about 1 minute on each side until golden brown.

Pour basil cream into four glasses, arrange salmon tartare on top and serve with scallop skewers and lime wedges. Garnish to taste with toast stars.
