- For the tartare
- 200 grams fresh Salmon (ready to cook, skinless)
- 1 shallot
- 2 Tbsps grapeseed oil
- ½ organic Lime (zested and juiced)
- Sea salt
- freshly ground peppers
- For the toast and garnish
- 4 slices Toast (toasted)
- 100 grams Watercress
- 2 Tbsps Cranberry sauce
- 2 Tbsps Herb cream cheese

Preparation steps

For the salmon tartare, rinse salmon fillet, pat dry and finely chop. Peel shallot and finely chop. Mix salmon, shallot, lime zest, lime juice and grapeseed oil and season with sea salt and pepper.

For the toast stars, use a cookie cutter to cut a large star from a slice of toast. Leave the cookie cutter in place on the toast to top toast with salmon tartare. Gently remove cookie cutter and set on serving plate. Repeat with remaining toast slices and filling. To serve, garnish salmon tartare stars with watercress leaves, a few drops of cranberry sauce and dollop of herb cream cheese.
