- For Dressing
- ⅓ cup plain Yogurt (or sour cream)
- 1 Tbsp fresh Dill (chopped)
- 1 Tbsp honey
- 2 tsps Dijon mustard
- 1 clove garlic cloves (minced)
- 1 Tbsp Lime juice
- freshly ground Black pepper (to taste)
- 2 ⅔ cups fresh Cheese tortellini (cooked and drained)
- 1 ½ cups smoked Salmon (cut in strips)
- 1 Cucumber (sliced in rounds and cut in quarters)
- 1 Tbsp fresh Dill (chopped)
- freshly ground Black pepper (to taste)

For Dressing:

In a bowl, whisk all ingredients. Season with pepper, cover and chill for one hour.

For Tortellini Salad:

Cook tortellini until al dente, or according to package instructions; drain (can be made up to 8 hours ahead, cover and chill).

Add salmon, cucumber, and dill to tortellini. Drizzle with enough dressing to coat and toss lightly. Season with pepper. Serve.
