350 grams Puff pastry dough
2 Tbsps finely chopped rosemary
6 slices Bacon
1 egg yolk

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F).  

2.

Roll the puff pastry out to  about 3-4 mm (approximately 1/10-1/8 inch) thick. Sprinkle with the chopped rosemary and cover with the bacon slices. Trim the uneven edges of the puff pastry and gently roll each side in until they meet in the center. Cut the roll into 2 cm (approximately 3/4 inch) thick slices and place on the prepared baking sheet.

Whisk the egg yolks with 2 tablespoons of water and brush over the puff pastry slices.

Bake for 20 minutes, until golden brown. 

5.

Remove from the oven and cool on a wire rack.
