Preparation steps

Preheat the oven to 120°C (approximately 250°F).

Rinse the duck breasts, pat dry and cut a diamond-shaped pattern in the skin. Season on all sides with salt, pepper, allspice and cloves. Cook on the skin side in a hot pan until golden brown, about 5 minutes. Remove from the pan and place on the oven rack. Cook in the oven with a drip pan underneath and leave until done, 25-30 minutes.

Rinse the pears and cut into wedges. Drain the fat from the pan and cook the pears in the browned bits on the cut surfaces. Remove and add to the meat in the oven. Deglaze the pan drippings with the wine and let boil down a little. Rinse the blackberries if necessary and add to the sauce in the pan with the butter and the honey. Season with salt and pepper.
