- 6 garlic cloves
- 4 Tbsps vegetable oil
- salt
- peppers
- 4 bay leaves
- 4 Beefsteak tomato
- 10 shallots

Preparation steps
1.
Rinse meat and pat dry. Peel garlic and cut in half. With a sharp knife, cut thin pockets into meat and push cloves into the pockets. Season with salt and pepper and place in a roasting pan. Heat oil, baste roast, add bay leaves and cook in oven set at 180°C (approximately 350°F) for about 2 hours. After 1 hour, peel shallots and place beside meat.

Wash tomatoes and cut into thick slices. Season with salt and pepper to taste and layer in a baking dish. Broil for 10 minutes and serve hot with wild boar and shallots.
