- 3 cups extra firm Tofu (cubed)
- 2 cups cherry Tomatoes
- 4 small, white onions (chopped)
- 2 cups mixed Wild mushroom (brushed clean)
- ½ yellow pepper (sliced)
- 2 Tbsps olive oil
- 1 Tbsp Cider vinegar
- 1 handful Basil

Preparation steps
1.
Preheat the oven to 180°C (160° fan) | 350F | gas 4.
2.
Combine the tofu, cherry tomatoes, onion, mushrooms, pepper, and olive oil in a large mixing bowl. Season with salt and pepper and toss well to coat.
3.
Transfer to a roasting dish and roast in the oven for 35 - 45 minutes until the vegetables and tofu are tender and lightly coloured.
4.
Remove from the oven and leave to stand briefly before serving in bowls garnished with basil leaves.
