Roast Garlic Chicken

- 1 Roasted Chicken (1.6 kg)
- 1 bunch Sage
- 1 Tbsp thyme (chopped)
- 40 garlic cloves
- olive oil
- 6 centiliters Vermouth (dry)
- 200 milliliters white wine
- 200 milliliters Chicken broth
- salt
- freshly ground peppers
Preparation steps
Rinse and pat dry chicken.
Chop sage, setting some leaves aside for garnishing. Combine chopped sage with thyme and 3 tablespoons of olive oil.
Season chicken inside with salt and pepper and rub with olive oil. Stuff chicken with ten unpeeled garlic cloves. Season with herb mixture on the outside and place into a roasting pan. Season with salt and pepper, drizzle with olive oil, add garlic cloves to the pan and roast in preheated oven at 180°C (approximately 350°F) for about 15 minutes. Add half of white wine, broth and vermouth to the pan and roast for 50-60 minutes more. Gradually add remaining liquid and baste chicken with cooking juices often. Season chicken with salt and pepper to taste, arrange on a platter and serve garnished with remaining sage.
