Preparation steps

Preheat the oven to 180 ° C convection.

Rinse chicken and pat dry. Season inside and out with salt and pepper. Rinse tarragon and shake dry. Stuff chicken with half of tarragon and tie up chicken with a kitchen twine. Place into a buttered roasting pan and brush with a little butter. Roast in preheated oven at 180°C (approximately 350°F) for about 1 hour, basting occasionally with butter.
