- 1 chicken (about 1.4 kg)
- salt
- freshly ground peppers
- vegetable oil (for the roasting pan)
- 350 grams button Mushroom
- 1 garlic clove
- 100 grams freshly grated Cheese (such as Gouda)
- thyme (for garnish)
Preparation steps
1.
Preheat the oven to 180°C (approximately 350°F).

Rinse the chicken, pat dry, season with salt and pepper inside and out and place breast side down in an oiled roasting pan. Roast in preheated oven for about 60 minutes.

Meanwhile, clean the mushrooms and cut into quarters.
4.
Peel the garlic and press through a garlic press into a bowl. Add mushrooms and season with salt and pepper. Toss to combine. After half of cooking time, turn the chicken and sprinkle with the cheese. Distribute the mushroom mixture around the chicken and cook until cheese is melted and mushrooms are softened.
5.
Top with thyme sprigs and serve.
