- 1 chicken (ready to cook)
- 1 tsp Juniper berries
- 2 bay leaves
- ½ Celery (peeled and coarsely chopped)
- 2 onions (peeled and quartered)
- 2 Tbsps vegetable oil
- 4 carrots (peeled and sliced)
- salt
- freshly ground peppers
- 1 l Dark beer

Preparation steps
1.
Rinse and pat dry chicken. Season with salt and pepper inside and out.

Grease roasting pan with oil, spread with vegetables and top with chicken, breast side down. Roast in preheated oven at 180°C (approximately 350°F) for about 30 minutes or until vegetables are browned. Add 0.5 liters (approximately 2 cups) of beer, turn chicken over and add juniper berries and bay leaves to the pan. Roast for 30 more minutes and baste chicken with remaining beer often.
3.
Quarter chicken and arrange on plates. serve.
