Ingredients

For the roast beef
1 kilogram Beef fillet (center-cut)
1 Tbsp clarified butter
salt
freshly ground peppers
1 garlic clove
1 lemon
For the tomato sauce
1 sm can peeled Tomatoes
1 Tbsp Tomato paste
3 Tbsps olive oil
1 shallot
1 garlic clove
salt
freshly ground peppers
1 pinch sugar
Tabasco sauce

Preparation steps

1.

Remove individual cloves from garlic bulb. Do not peel.

For the roast beef, rub beef with salt and pepper. Heat clarified butter in a pan and sear beef fillet on all sides over high heat. Place beef and unpeeled garlic cloves on a greased baking sheet. Bake in preheated oven at 200°C (approximately 400°F) for about 25 minutes.

Turn oven temperature to "off." Open oven door and let beef rest in open oven for a few minutes.

For the tomato sauce, heat olive oil in a pan and sauté finely chopped shallot until translucent. Squeeze baked garlic clove from peel into pan. Mash garlic with a fork and stir and let cook briefly. Add canned tomato with juice. Stir in tomato paste and season with salt, pepper and sugar. Add a few dashes of hot pepper sauce, if desired. Simmer, uncovered, for about 10 minutes.

5.

Slice beef and serve with baked garlic cloves and tomato sauce. Serve with lemon wedges and a small green salad, if desired.
