For the roast beef and sweet potato slices
400 grams Sweet potato
salt
freshly ground peppers
4 sprigs thyme
2 Tbsps olive oil
2 Tbsps Mayonnaise
2 Tbsps Horseradish cream
1 Tbsp grainy Mustard
12 slices Roast beef
For the garnish
2 tsps peppercorns
scallions

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Scrub sweet potatoes thoroughly, cut off the ends and cut sweet potatoes into 1 cm (approximately 1/2 inch) thick slices. Place sweet potato slices on a baking sheet lined with parchment paper and season with salt and pepper and thyme. Drizzle with oil and bake in preheated oven about 20 minutes until golden brown.

For horseradish cream, mix mayonnaise with horseradish and mustard and season to taste with salt and pepper.

Remove potatoes from the oven and place on a plate. Serve with roast beef slices on top of sweet potato and garnish with a dollop of horseradish cream, pink pepper and chives.
