¼ cup milk
1 tsp cocoa powder
1 strip unwaxed Orange zest
4 Tbsps sugar
3 ½ ozs Dark chocolate (70% cocoa solids, chopped)
3 eggs (separated)
1 pinch salt
1 Tbsp all-purpose flour
4 Pear

Preparation steps

1.
Heat the oven to 180°C (160°C fan) 375°F gas 5. Butter 4 ramekins and sprinkle with sugar.

Mix together the milk, cocoa, orange zest and half the sugar. Place in a pan and bring to a boil. Remove from the heat and remove the orange zest. Add the chocolate and allow to melt.
3.
Whisk the egg whites and salt until stiff and gradually whisk in the remaining sugar. Stir the egg yolks and flour into the melted chocolate. Fold in the beaten egg whites and transfer the mixture to the ramekins.
4.
Place a pear in each ramekin and place the ramekins into a large, oven-proof dish. Fill the dish with 2-3cm|1" of hot water and bake for 20-25 minutes. Remove from the oven and serve immediately.
