300 grams fresh Spinach
300 grams Ricotta cheese
2 Tbsps Pastry flour
2 eggs
salt
freshly ground pepper
Nutmeg
In addition (if desired)
Red basil
Chervil

Preparation steps

1.

Rinse spinach, remove hard stems and saute, dripping wet, for a few minutes. Drain and squeeze well, chop coarsely.

2.

Combine spinach with ricotta, flour and eggs, season with salt, pepper and nutmeg. Shape into balls with wet hands. 

3.

Cook dumplings in boiling salted water for about 6-8 minutes or until dumplings rise to the surface. Drain on paper towels. 

4.

Arrange dumplings on plates and serve garnished with basil and chervil leaves.
