Rice with Chicken

- 100 grams Basmati rice
- 2 Chicken breasts
- 1 Tbsp yellow Curry paste
- 2 Lemon leaves
- 150 grams Snow peas
- 100 grams Mung bean sprouts
- 50 grams Peanuts
- salt
- 1 Tbsp Peanut oil
- 1 tsp sugar
- 2 Tbsps Chinese Fish sauce
Preparation steps
Rinse rice in a sieve under running water, then boil covered with almost twice the amount of lightly salted water over a very low heat for about 20 minutes. Allow to swell.
In the meantime cut the chicken breasts into thin strips, mix with the curry paste, cover and let infuse about 10 minutes.
Rinse lemon leaves in hot water, shake dry and cut into very thin strips. Rinse snow peas and mung bean sprouts. Brush the snow peas. Coarsely chop both. Chop the peanuts finely.
Heat the oil in a wok and brown the meat while stirring; remove and set aside. Add lemon leaves, snow peas and sprouts to the wok and cook while stirring. Stir in sugar and fish or soy sauce. Add the add meat again, mix in peanuts and heat both. To serve, arrange the meat on the rice.
