- 300 grams Long grain rice
- 150 milliliters Tomato juice
- 150 milliliters Vegetable broth
- 1 handful Baby spinach
- 3 sheets Sorrel
- 2 garlic cloves
- 400 grams Cherry tomatoes
- 2 Tbsps olive oil
- 1 Tbsp freshly chopped Chives
- salt
- 80 grated Parmesan

Preparation steps
1.
Rinse rice. Combine rice with tomato juice and broth and simmer until al dente, about 15 minutes.

Rinse, shake dry and coarsely chop spinach and sorrel leaves. Peel and finely chop garlic. Rinse and drain tomatoes.
3.
Heat oil in a large frying pan. Add tomatoes and garlic and sauté until the tomatoes begin to fall apart, 2-3 minutes. Stir in rice, spinach, sorrel and chives. Season with salt and pepper and serve sprinkled with cheese.
