- 200 grams short grain rice
- 2 Tbsps Chicken broth
- 2 Tbsps lemon juice
- 1 bunch parsley
- 1 tsp ground Cumin
- salt
- peppers
- 8 crayfish
- 2 sprigs thyme
- 1 bay leaf
Preparation steps

Rinse rice, then pour into a pot. Fill with water until it is about 2 cm (approximately 1 inch) above the rice. Add salt, cover and bring to a boil, then reduce heat and simmer for about 25 minutes. Let cool.

Mix 2 tablespoons chicken broth, lemon juice, cumin, salt and pepper with the rice. Chop the parsley finely, then mix in.

Bring 1 liter (approximately 4 cups) of water to boil with the thyme and bay leaf. Rinse the crawfish and add to the boiling water; cook for 5 minutes, then drain. Serve the rice salad with the crawfish on plates.
