250 grams Strawberries
1 shallot
1 Tbsp olive oil
1 Tbsp butter
250 grams Arborio rice
800 milliliters dry Red wine
50 grams freshly grated Parmesan

Preparation steps

Rinse the strawberries, hull and cut into pieces (set some aside for garnish). Peel the shallot and very finely dice. Heat the olive oil and butter in a saucepan and sauté the shallot until soft. Add the rice and stir to coat in the oil. Add a little red wine and cook over low heat, stirring frequently, until almost all liquid is absorbed. Add the strawberries. Continue to add wine in this manner and cook until rice is al dente, about 20 minutes, stirring frequently.

Fold in the grated Parmesan cheese.

Distribute the risotto between 4 serving bowls and garnish with reserved strawberries and a little grated cheese.
