- 7 ozs phyllo pastry
- 0.333 cup butter (melted)
- For the filling
- 1 Tbsp butter
- 1 Tbsp olive oil
- 2 ½ cups Mushrooms (quartered)
- 4 red Bell pepper (cut into strips)
- 2 Tbsps chopped, fresh thyme
- 1 ⅔ cups Brie (chopped)
- To garnish
- snipped Chives

1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Small knife, 1 Fine grater, 1 Salad bowl, 1 Salad spinner, 1 Salad server, 1 Non-stick pan, 1 Slotted spatula, 1 Paper towel
Preparation steps

Heat the oven to 200°C (180° fan) 400°F gas 6. Brush a 23 cm|9" loose-based tart tin with some of the melted butter and lay a sheet of filo on top. Brush with more butter; top with another layer of filo. Continue, overlapping the sheets over the rim of the tin, until all the sheets of filo pastry have been used.

Bake for 5 mins until just beginning to crisp.

For the filling: heat the butter and oil in a large pan; add the mushrooms and cook for 10 minutes until golden.

Add the peppers, increase the heat and cook for 5-10 minutes until soft. Season and add the thyme.

Scatter the cheese on the base of the pastry case and spoon in the filling. Bake for about 10 minutes until the filling is piping hot.
6.
Cool in the tin. Garnish with chives.
