3 sprigs parsley (leaves removed, some set aside to garnish, rest chopped)
2 red peppers (sliced)
1 clove garlic cloves (finely chopped)
2 Tbsps butter

Preparation steps

Mix together the eggs and cream and stir in the chopped parsley. Season with salt, ground black pepper and nutmeg.

Fry a quarter of the pepper and a little garlic in hot butter for 2-3 min. Pour a quarter of the egg mixture into the pan and fry for 1-2 min until solid. Flip and cook on the other side, then remove from the pan. Keep warm in the oven and continue like this until all the other omelettes are done. Serve garnished with parsley.
