3 Tbsps olive oil
1 onion (chopped)
1 tsp paprika
½ tsp cayenne pepper
2 cups canned Tomatoes (chopped)
4 Tbsps tomato puree
2 ½ cups Beef stock (or chicken stock)
2 cups canned, red Kidney beans (drained and rinsed)
1.333 cups carrots (chopped)
1 red pepper (deseeded and finely chopped)

Preparation steps

1.
Heat the oil in a pan and gently cook the onion until translucent.
2.
Add the paprika and cayenne, cook for one minute then add the tomatoes and tomato puree. Bring to a boil then puree with a hand blender.
3.
Add the stock, beans, carrots and pepper and simmer gently for about 20 minutes.
4.
Season with salt and pepper and serve.
