1 roll Puff pastry dough 300 grams (approximately 11 ounces)
4 Tbsps sugar
150 grams Raspberry jam
2 centiliters raspberry Brandy

Preparation steps

Roll out the puff pastry and place on a sugar-dusted surface. Mix the jam with raspberry liqueur and spread on the dough, leaving about 3 cm (approximately 1 inch) free on each narrow side. Roll each narrow side to the middle, so that the two rolls touch in the center. Cut with a cold knife into slices as close to 1 cm (approximately 1/2 inch) thick as possible. Rinse a baking sheet under cold water and place the Palmiers on it. Reshape if needed and refrigerate for 15 minutes.

Meanwhile, preheat the oven to 220°C (approximately 425°F). Slide the tray into the oven and bake for about 15 minutes, turning the Palmiers 2-3 times during baking. After baking, immediately remove from the baking sheet, otherwise the Palmiers will stick to the sheet. Best enjoyed fresh.
