- 1 ⅓ cups Quinoa
- ½ bunch Watercress
- 8 Radish (sliced)
- 3 Tbsps extra virgin olive oil
- 1 Tbsp white wine vinegar
- salt
- peppers
- 2 Tbsps Oil
- 4 boneless, skinless Chicken breasts (cut into strips)

Preparation steps
1.
Cook the quinoa according to the packet instructions. Drain, rinse in cold water and set aside.
2.
Heat the oil in a wide pan and fry the chicken for 5 minutes, or until cooked through.
3.
Mix the quinoa with the watercress and radishes. Mix together the olive oil and vinegar, season with salt and pepper and stir into the salad with the chicken strips.
