- 4 Chicken breasts (skinned)
- 3 Tbsps olive oil
- 1 clove garlic cloves (finely chopped)
- 1 tsp ground Cumin
- For the salad
- 1 ⅛ cups red Quinoa
- 1 Red onion (sliced)
- 1 red pepper (deseeded and sliced)
- 1 yellow pepper (deseeded and sliced)
- 2 cups canned chickpeas (drained and rinsed)
- 3 Tbsps olive oil
- 1 Tbsp white wine vinegar
- salt

- 4 handfuls Corn salad (lamb's lettuce)

Preparation steps

Mix together the oil, garlic and cumin, season with salt and pepper and rub into the chicken breasts. Leave to marinate for 30 minutes.

Cook the quinoa according to packet instructions. Drain and rinse under running water.

Mix the quinoa with the onion, peppers and chickpeas. Mix together the olive oil and vinegar, season with salt and pepper and stir into the salad.

Heat 2 tbsp oil in a wide pan and fry the chicken for 5 minutes on each side or until cooked through.

Slice the chicken breasts and serve on the lambs lettuce with the quinoa salad alongside.
