1 Vanilla bean
200 grams green seedless Grape
100 milliliters Apple juice
2 Tbsps honey
1 Tbsp lemon juice
150 milliliters Buttermilk
1 Tbsp slivered almonds (15 grams)
ground Mace

Preparation steps

1.

Rinse the quince and cook in boiling water for about 50 minutes, until soft.

2.

Meanwhile, slit the vanilla pod lengthwise and scrape out the seeds. Rinse the grapes and pat dry.

3.

Drain the quince, peel, cut in half, core and dice the flesh coarsely.

4.

Puree the quince cubes with vanilla seeds, apple juice, honey and lemon juice in a blender. Distribute the puree into 4 glasses and pour the buttermilk over the top.

5.

Garnish with the grapes and almonds and sprinkle with mace.
