Preparation steps

Trim the ends of the quince, cut into eighths and place in a piece of cheesecloth. Bring the lemon juice and 1.25 liters (approximately 5 cups) water to a boil, add the cloth with the quince pieces and let simmer covered 40 minutes. Cool the quince, drain and press through the cloth, reserving the juice. Measure 1 liter (approximately 4 cups) of quince juice, mix with the sugar and cook for 4 minutes. Set aside and allow to cool slightly.

Dissolve the gelatin in cold water and mix well with the quince mixture. Pour into a shallow dish, cover, refrigerate and allow to gel. To serve, cut into cubes and roll in powdered sugar.
