- 2 Tbsps Oil
- 2 Tbsps butter
- 1 onion (chopped)
- 2 cloves garlic cloves (chooped)
- 32 ozs Pumpkin (peeled, deseeded and chopped)
- 3 cups vegetable stock
- 1 cup cream (30% fat)
- Sage (to garnish)
- 1 red, dessert Apple (grated, to garnish)
- 2 Tbsps cream (30% fat, to garnish)
Preparation steps

Heat the oil and butter in a large pan and gently cook the onion until soft but not brown.

Add the garlic, cook for 1 minute then add the pumpkin and stir well.

Pour over the stock, season with salt and pepper and bring to a boil. Simmer gently for 20 minutes or until the pumpkin is tender then blend with a hand blender until very smooth. For an extra silky texture, pass the soup through a fine sieve into a clean pan.
4.
Stir in the cream, reheat gently then serve garnished with sage leaves, a little grated apple and a swirl of cream.
