- 2 centimeters fresh ginger
- 1 onion
- 3 carrots
- 500 grams Pumpkin
- 2 Tbsps butter
- 100 milliliters Sparkling wine
- 300 milliliters Orange juice
- 500 milliliters Vegetable broth
- salt
- freshly ground peppers
- 2 Tbsps Pesto (jarred)
- Wild herb (for garnish)
Preparation steps
Peel and finely dice the onion, ginger, and carrots. Finely dice the pumpkin also.
Melt the butter in a saucepan, and sauté the onion and ginger. Add the remaining diced vegetables, and mix in the sparkling wine.Add the orange juice and the broth, and season to taste with salt and pepper. Simmer for 20 minutes over medium heat. Puree with an immersion blender, and adjust the seasoning if necessary. Transfer to bowls, drizzle with the herb pesto, and garnish with fresh herb leaves.
