- 1 pkg Baby spinach (rinsed and trimmed)
- 1 cup fresh Cherry tomatoes (halved)
- ¾ cup Pecan (Halved)
- 2 Tbsps Oil
- 1 tsp sugar
- salt (to taste)
- ½ cup olive oil
- 2 Tbsps Red wine vinegar (or sherry vinegar)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 1 small block Feta (cubed or crumbled)

Preparation steps
1.
Preheat oven to 400 degrees F. Place spinach and tomatoes in salad bowl.

Coat pecans with oil, sugar and salt. Arrange in a single layer on a baking sheet. Roast until fragrant and a shade darker, about 8 minutes. Remove from oven and set aside.
3.
Dressing: Combine olive oil, vinegar, salt and pepper in a bowl and whisk together until mixed thoroughly.
4.
Toss spinach and tomatoes with dressing, Feta, and pecans. Divide between plates and serve.
