750 grams lamb
2 onions
2 Tbsps vegetable oil
4 Celery
4 carrots
1 lg can peeled Tomatoes
300 grams Pumpkin (diced)
½ tsp ground ginger
400 grams floury potatoes
¼ l milk
salt
peppers
parsley (for garnishing)

Preparation steps

Rinse lamb, pat dry, cut into cubes. Season with salt, pepper and ginger and let stand, covered, for 30 minutes. Heat oil in a heavy ovenproof pot. Peel onions and chop coarsely, saute until translucent. Add lamb and saute until browned on all sides. Rinse celery, trim ends and cut diagonally into pieces. Rinse and peel carrots, cut into slices. Add prepared vegetables, diced pumpkin and tomatoes to lamb, cover and simmer for 1 hour.

Place pot in the oven and cook at 175°C (approximately 325°F) for 30 minutes.

Cook potatoes in boiling salted water for 20 minutes, drain, peel and mash. Add hot milk and season with salt and pepper. Serve lamb and pumpkin stew accompanied by mashed potatoes. Garnish with parsley.
