1 packet Puff pastry dough (frozen)
1 bowl Blueberries
250 grams Mascarpone
50 grams sugar
lemons (juiced and zested)
Lemon balm (for decoration)
Dried pea (for blind baking)
powdered sugar

Preparation steps

Separate the puff pastry sheets and thaw. Cut the pastry sheets into 4 pieces and place into a cold baking sheet. Spread 1 tablespoon dried peas over pastry sheet pieces in the baking sheets. Blind bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) for about 12 minutes, until golden brown.

Remove the baking dish from the oven, let cool and take out the dried peas.

Mix the mascarpone cheese with sugar and lemon juice. Place one dollop of cheese mixture over each baked pastry piece, top with blueberries and serve decorated with lemon zest and lemon balm. Dust with powdered sugar.
