- 150 grams Baby spinach
- 600 grams Puff pastry dough
- Pastry flour (to work)
- 160 grams air-dried ham (such as prosciutto, in slices)
- 180 grams Emmentaler cheese (in slices)
- 1 egg
- 1 Tbsp Poppy seeds
Preparation steps

Rinse and trim spinach and shake dry. Preheat the oven to 200°C (approximately 400°F).

Roll out half of the puff pastry on a floured surface into a rectangle of about 20 x 30 cm (approximately 8 x 12 inches). Line a baking sheet with parchment paper and lay the pastry on it. Layer the ham, spinach and cheese as uniformly as possible on the dough. Roll out the remaining pastry to the same size and cover the tart with it. Cover with parchment paper and place a second baking sheet on top. Bake for about 20 minutes. Remove the top baking sheet and the parchment paper, Brush the pastry with beaten egg and sprinkle with poppy seeds. Bake an additional 15 - 20 minutes, until golden brown. To serve, cut into small squares.
