9 ozs Puff pastry
flour
cup Ricotta cheese
1 Tbsp chopped thyme
salt
peppers
8 slices Prosciutto
1 ⅔ cups cherry Tomatoes (halved)

1 Tbsp olive oil
To garnish
0.333 cup black Olives (pitted)

Preparation steps

1.
Heat the oven to 220°C (200° fan) 425°F gas 7. Grease a 23cm|9" baking tin.
2.
Roll out the pastry on a lightly floured surface and line the tin. Prick the base with a fork. Line the pastry case with non-stick baking paper and fill with rice or dried beans. Bake for 5 minutes. Remove from the oven and remove the paper and beans.

Reduce the oven temperature to 200°C (180° fan) 400°F gas 6.

Mix together the ricotta, chopped thyme, salt and pepper. Spread over the pastry base. Arrange the prosciutto and tomatoes on top. Place a few thyme sprigs on top and drizzle with a little olive oil.
5.
Bake for 15-20 minutes, until the pastry is golden brown. Cool slightly, then drizzle with a little olive oil and scatter with olives, thyme and basil leaves
