- 800 grams predominantly waxy potatoes
- salt
- 6 Tomatoes
- 1 onion
- 1 garlic clove
- 2 Tbsps olive oil
- 1 Tbsp Tomato paste
- Tabasco sauce
- brown sugar
- 1 Tbsp freshly chopped parsley
- vegetable oil (for cooking)
Preparation steps
1.
Peel and rinse potatoes, dice and cook in boiling salted water for about 5 minutes. Drain.

Blanch tomatoes in hot water, rinse in cold water and peel. Quarter, core and dice. Peel onion and garlic and chop finely. Heat oil in a pan and saute onion and garlic for 2 minutes, add tomatoes and simmer for about 5 minutes. Season with Tabasco, salt and a little sugar to taste.

Heat oil in a pan and cook potatoes for about 5 minutes or until golden brown. Arrange potatoes on plates and top with tomato sauce. Sprinkle with parsley and serve.
