Preparation steps

Peel the potatoes and boil in salted boiling water for about 30 minutes. Drain then press through a potato ricer. Let the steam evaporate then mix the flour, Parmesan and eggs into the potatoes and season with salt, pepper and nutmeg. Knead until smooth then shape into 3/4 inch thick logs. Cut into 3 cm (approximately 1-inch) wide pieces then press over the back of a fork to create grooves. Simmer in salted water until the gnocchi float to the surface.

Melt the butter in a deep pan, add the sage leaves and cook until fragrant. Add the drained gnocchi and a little cooking water, if necessary. Toss to combine. Serve with grated Parmesan.
